At Fly By Night Cattle Company, the Craft family is giving our guests an authentic Texas experience with a menu and atmosphere that are true to our roots. In 2013, we transformed our ranch into a destination restaurant for Johnson County. Our family recipes and relics have made our ranch a must-visit spot for lovers of all things reminiscent of the Lone Star State. Hand-cut daily from the finest Black Angus beef, our steaks bring in folks from far and wide, and our fun Texas atmosphere makes them want to stick around. We're keeping up the catering we've been providing for over 20 years, and now that we've opened up our ranch to the world, we're hosting parties, events, and weddings, too!

Had dinner here tonight to celebrate Valentines Day. Saw reviews and wondered if a steak house so close to home could compete and I'm here to say it does! And then some! We had a reservation and we're sat within minutes. The decor inside is so unique and the views of the pasture was beautiful. Our server was very informative and attentive and took great care of us.
We started off with the shotgun shells which were very good. Ranch was homemade and only con was the bacon wasn't as cooked as i prefer inside of it.
I ordered the salad with salmon and the salad and lemon vinaigrette alone were so good. Adding the salmon which was cooked to my specification of medium well just made it that much better. I wanted to try the corn so i ordered or as a side. My husband ordered the chicken fried steaks and said it was the best he had ever had. I csn say with complete confidence the best thing on his plate for me was the mashed potatoes. Like wow - i can't even adequately describe it. We had to have dessert because it was all so good we knew that would be the perfect ending. We got the banana pudding and it did not disappoint.
Worth saying- saw hats inside and saw that was a no no at some point. Either that was misstated or they updated the policy. It's also open carry which in Texas is always welcome. We will be back- very soon!Helpful 1Thanks 0Love this 1Oh no 0Business owner information

Sign at the Door ,LOL,REALLY we went here a few days ago, laughed at the sign, really a joke,
am Native Texan,been to many,upscale restaurants,& NEVER HAD THIS KIND OF AN UNWELCOMING FEELING.
WE WAITED FOR A BIT, WASN'T VERY BUSY SEATED AND THEN THAT'S WHERE EVERYTHING FELL THROUGH AND Got Worse,GOT UP AND WALKED OUT
I have had much better meals at Texas Roadhouse,Hard 8 BBQ,Logan's, and especially Cattlemen's Steakhouse in the stockyards and ESPECIALLY, The Big Texan Steakhouse in Amarillo,Texas WHERE I HAVE NEVER HAD A BAD MEAL or Time at, and has always been very friendly setting and is A TRUE TEXAS Hospitality.

Do not underestimate this little spot out in the country! Beautiful inside and out. We made reservations online for an early Friday night dinner to avoid the crowds while still enjoy a great meal. We had okra appetizer which came with an addictive chipotle ranch aïoli. They were so good -like okra French fries :) He had the chicken fried steak and when I tell you it was bigger than his head I am not exaggerating! Wildy huge. Came with mashed potatoes and green beans. I had the shrimp and grits which were completely decadent. If someone knows how many calories are in that plate, please please please don't ever tell me! Haha! We will be back soon to try the other menu options because they are varied plus we need to try a steak of course!

Welcome to the 'NO' abode. I had dinner there for the first time tonight and the place was adorable, the food was delicious, however a bit overpriced.
The first impression at the door is a bit off putting. I was there for a lovely meal and I was immediate hit with a bunch of no's at the door. It did not feel great as a start to a $200 evening.

What a gem! Beautiful view, food was great, and the service was fantastic. My husband had the chopped steak, whipped potatoes and green beans. I had the fired tenderloin, polenta and green beans. Both were really really good. We also tried the fried okra pods (must have those). This place is definitely a five star restaurant.

My mom really enjoys this place and suggested we go since I was visiting. The southern/country vibe isn't for me, but I can appreciate a farm-to-table concept. The servers were all very kind and all courses came out as they should. The okra pods tasted like burnt okra chips. The charcuterie board is.. well a charcuterie board. I don't think you can mess these up but it didn't really stand out for $18. They ask if you want to add a salad to your steak and my brother didn't end up wanting it, so I tried it with a vinaigrette. I think they forgot to shake up the dressing because it was just an oily salad that I ended up putting chipotle ranch from the okra app on.
HOWEVER, the cuts of steaks were amazing. They were so tender, juicy, and perfectly cooked. My only gripe is that they just weren't very seasoned. Things didn't seem to have a lot of seasoning here. And the mashed potatoes were over whipped. I don't know. Something was off with the texture that wasn't sitting right with me.
My mom's husband paid so I wasn't one to complain.
Overall I think if you live near this place then it's a good "nice" steakhouse option so you don't have to drive to Dallas or Fort Worth. I'll go back if my mom invites me again, otherwise I'm just staying in Dallas.Helpful 1Thanks 0Love this 0Oh no 0 - S B.Crowley, TX49427Feb 1, 2024
One billion percent recommend. We've had several different waiters and they were all remarkable, like we went home talking about how great they'd been kind of experiences. They always treat my dietary restriction with such care. That menu is can't miss. The huge picture windows make this a great place to take out-of-town visitors. If they've never had chicken fried steak, you can really knock their socks off with that jalapeño one. So good!!

Visited your restaurant coming from Hurst, Texas celebrating our 43 year anniversary to be let down. The atmosphere was good and so was our waiter, but the steak was not at all very good plus my wife ask for well done, but as you will see in the pictures wasn't. Our waiter did ask my wife to cut into her steak and on the end she cut was fine not so much as you got to the center.

After hearing wonderful things about this place our dining group gave it a try last night and we were for the most part disappointed with what we found.
After arriving early for a reservation we found a busy bar with extremely $$$ pricey cocktails.
A couple in our group asked for different sides instead of what was offered & even though the sides were priced the same we were all told there would be no substitutions allowed and would be charged extra if we wanted those sides instead of what was offered. The food did arrive promptly but was not what was expected. Chopped steak was doused with enough pepper alone to make me sweat, chicken fried tenderloin was coated in something other than traditional flour and appeared to be made of corn meal or grits instead of traditional flour and several sides that were ordered didn't arrive.
I doubt this place will last long, service was subpar and just wasn't worth the drive.

Jason, I hope you were able to bring this to our attention while you were here. A la carte items are only offered family style and not offered as a substitution. However, we are always happy to re-make your food or prepare something else if your first selection is not perfect. With that being said, we always hope that our guests will ask to speak to a manager when an issue arises. We would have loved the opportunity to speak with you in person. We truly hope that you will give us another chance in the future.
